Mini Mousse Cupcakes

Total Time: 52 mins Preparation Time: 45 mins Cook Time: 7 mins

Ingredients

  • 2 1/3 cups milk chocolate chips
  • 6 eggs, beaten
  • 1/4 cup all-purpose flour, plus
  • 2 tablespoons all-purpose flour
  • whipped cream
  • chocolate shavings

Recipe

  • 1 melt chocolate in a double boiler over medium heat, and let cool slightly.
  • 2 in a large bowl, beat eggs and flour.
  • 3 beat in melted chocolate until combined.
  • 4 fill paper-lined mini muffin cups 2/3 full.
  • 5 bake at 325, for 7-10 minutes, until edges are done and centers shake slightly.
  • 6 cool in tin on wire rack for 20 minutes.
  • 7 remove from tin; cool completely.
  • 8 garnish with whipped cream and chocolate shavings.
