Molasses Cake (not Gingerbread!)

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 2 1/8 cups flour (10.5 oz)
  • 1/2 teaspoon salt
  • 1 1/3 teaspoons baking soda
  • 12 tablespoons unsalted butter, melted
  • 1/4 cup brown sugar (1.75 oz)
  • 1/4 cup sugar (1.75 oz)
  • 1 1/3 cups molasses (not blackstrap!!!)
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1 -2 cup chocolate chips (substitute any chip, chunk or nut) (optional)

Recipe

  • 1 oven: 325.
  • 2 grease 2 8" round pans.
  • 3 mix flour, salt, & soda.
  • 4 mix butter & sugars, add molasses.
  • 5 mix in egg, yolk, and vanilla.
  • 6 add dry ingredients; stir in chips.
  • 7 bake about 25-30 minutes, until toothpick comes out clean.
