Simple Baked Oatmeal (lower Fat)

Ingredients

- 2/3-1 cup brown sugar (use the lesser amount if you are adding choc. chips)
- 1/3 cup oil
- 1/3 cup unsweetened applesauce
- 2 eggs, beaten or 1/2 cup egg beaters egg substitute
- 1 teaspoon vanilla
- 1/2 cup rice milk or 1/2 cup milk
- 1/2 cup water
- 3 cups rolled oats
- 1/4 cup oat bran
- 1/4 cup ground flax seeds
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2-1 teaspoon cinnamon
- 1/2 cup chocolate chips (optional) or 1/2 cup dried fruit (optional)
Recipe
- 1 preheat oven to 350°. in a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.
- 2 in a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.
- 3 add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.
- 4 pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges.
