Simple Baked Oatmeal (lower Fat)

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 10
  • 2/3-1 cup brown sugar (use the lesser amount if you are adding choc. chips)
  • 1/3 cup oil
  • 1/3 cup unsweetened applesauce
  • 2 eggs, beaten or 1/2 cup egg beaters egg substitute
  • 1 teaspoon vanilla
  • 1/2 cup rice milk or 1/2 cup milk
  • 1/2 cup water
  • 3 cups rolled oats
  • 1/4 cup oat bran
  • 1/4 cup ground flax seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2-1 teaspoon cinnamon
  • 1/2 cup chocolate chips (optional) or 1/2 cup dried fruit (optional)

Recipe

  • 1 preheat oven to 350°. in a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.
  • 2 in a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.
  • 3 add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.
  • 4 pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges.
