Peanut Butter Eggs

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1 (17 1/3 ounce) jar creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 (2 lb) package confectioners' sugar
  • 2 cups flaked coconut (optional)
  • 6 cups semi-sweet chocolate chips
  • 1/3 cup shortening

Recipe

  • 1 in a mixing bowl, beat cream cheese, butter, peanut butter and vanilla until smooth.
  • 2 beat in sugar.
  • 3 stir in coconut if desired.
  • 4 form rounded tablespoonfuls into egg shapes.
  • 5 place on waxed paper-lined baking sheets.
  • 6 chill for 30 minutes.
  • 7 in a microwave-safe bowl or heavy saucepan, melt chocolate chips and shortening.
  • 8 stir until smooth.
  • 9 dip eggs until coated.
  • 10 place on waxed paper to harden.
  • 11 for more decorative eggs, place about 1/4 cup melted chocolate in a small plastic bag.
  • 12 cut a hole in the corner of the bag.
  • 13 pipe chocolate over tops of eggs.
