Mexican Monkey Cake

Ingredients

- 1 1/2 cups dark chocolate chips
- 2/3 cup brown sugar
- 2 teaspoons ground cinnamon
- 125 g butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/4 cups bananas, mashed
- 2 tablespoons sour cream
- 1 tablespoon milk
- 1 1/2 cups flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
Recipe
- 1 heat oven to 160c (fan forced) grease a 20cm square baking pan.
- 2 in a small bowl, combine chocolate chips, cinnamon and brown sugar; set aside.
- 3 beat butter, sugar, and egg with an electric mixer until fluffy.
- 4 add bananas, yogurt, and milk, and mix well.
- 5 using a slotted spoon mix in flour, baking soda, baking powder, and salt just until blended.
- 6 spread slightly more than half of the batter in the pan.
- 7 sprinkle with half of the cinnamon/chocolate mix. carefully spread the remaining batter over this and then top with the rest of the cinnamon/chocolate mix.
- 8 bake until a toothpick inserted in the center of the cake comes out clean, about 40 to 50 minutes. cool in pan on a wire rack.
- 9 serve warm or at room temperature.
