Mexican Monkey Cake

Ingredients

  • Servings: 10
  • 1 1/2 cups dark chocolate chips
  • 2/3 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 125 g butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/4 cups bananas, mashed
  • 2 tablespoons sour cream
  • 1 tablespoon milk
  • 1 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt

Recipe

  • 1 heat oven to 160c (fan forced) grease a 20cm square baking pan.
  • 2 in a small bowl, combine chocolate chips, cinnamon and brown sugar; set aside.
  • 3 beat butter, sugar, and egg with an electric mixer until fluffy.
  • 4 add bananas, yogurt, and milk, and mix well.
  • 5 using a slotted spoon mix in flour, baking soda, baking powder, and salt just until blended.
  • 6 spread slightly more than half of the batter in the pan.
  • 7 sprinkle with half of the cinnamon/chocolate mix. carefully spread the remaining batter over this and then top with the rest of the cinnamon/chocolate mix.
  • 8 bake until a toothpick inserted in the center of the cake comes out clean, about 40 to 50 minutes. cool in pan on a wire rack.
  • 9 serve warm or at room temperature.
