Rocky Road Brownies

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 1 (19 1/2 ounce) package brownie mix
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 3 large eggs
  • 2 cups semisweet chocolate chips, divided
  • 2 cups miniature marshmallows
  • 1 cup coarsely chopped roasted lightly salted peanuts

Recipe

  • 1 preheat oven to 350°; position oven rack in the lower third of the oven.
  • 2 spray the bottom only of a 13 x 9 inch baking pan with nonstick cooking spray.
  • 3 in a bowl, mix the brownie mix, oil, water, and eggs with a wooden spoon until just blended and all dry ingredients are moistened.
  • 4 stir in 1 cup chocolate chips; spread batter into prepared pan.
  • 5 bake 28-30 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean (do not overbake).
  • 6 remove pan from oven and immediately sprinkle with marshmallows, remaining 1 cup chocolate chips, and the peanuts.
  • 7 cover pan with cookie sheet for about 5 minutes to soften (slightly) the chocolate chips and marshmallows.
  • 8 remove cookie sheet; transfer to a wire rack and cool completely.
