Roberta's Mocha Mousse

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • Servings: 5
  • 1 (6 ounce) package chocolate chips
  • 2 teaspoons instant coffee
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 3 eggs
  • whipping cream

Recipe

  • 1 in medium saucepan combine chocolate, coffee, 1/4 cup sugar and 2 t water. stir low heat until dissolved.
  • 2 remove from heat. stir til smooth. cool.
  • 3 add vanilla, egg yolks, one at a time, beating after each til yellow disappears.
  • 4 beat egg whites with remaining sugaruntil stiff peaks form.
  • 5 gently fold chocolate mixture into egg mixture til well combined.
  • 6 spoon into sherbert dishes.
  • 7 chill one hour, at least.
  • 8 top with whipped cream.
