Pink Gin And Tonic Lollipops

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 2 cups caster sugar
  • 2/3 cup sugar syrup
  • 60 ml gin
  • 125 ml tonic water
  • 3 drops of pink food coloring

Recipe

  • 1 place sugar, glucose, gin and tonic in a medium saucepan.
  • 2 cook over low heat, without stirring for 10 minutes till sugar dissolves.
  • 3 increase heat to high, bring to boil.
  • 4 cook for 10 minutes till mixture reaches 150 c/300 f on candy thermometer.
  • 5 mixture should be light golden colour.
  • 6 remove from heat , stir through pink colouring.
  • 7 lightly grease 12 lollipop or chocolate moulds.
  • 8 carefully pour in mixture, press a sticj into each one.
  • 9 allow to cool at room temp till set.
  • 10 lollipop moulds and sticks are available at speciality kitchenware stores.
