Pink Gin And Tonic Lollipops

Ingredients
- 2 cups caster sugar
- 2/3 cup sugar syrup
- 60 ml gin
- 125 ml tonic water
- 3 drops of pink food coloring
Recipe
- 1 place sugar, glucose, gin and tonic in a medium saucepan.
- 2 cook over low heat, without stirring for 10 minutes till sugar dissolves.
- 3 increase heat to high, bring to boil.
- 4 cook for 10 minutes till mixture reaches 150 c/300 f on candy thermometer.
- 5 mixture should be light golden colour.
- 6 remove from heat , stir through pink colouring.
- 7 lightly grease 12 lollipop or chocolate moulds.
- 8 carefully pour in mixture, press a sticj into each one.
- 9 allow to cool at room temp till set.
- 10 lollipop moulds and sticks are available at speciality kitchenware stores.
