Peppermint Chocolate Cake

Ingredients

- 3 tablespoons vegetable oil or 3 tablespoons melted butter
- 1 cup self raising flour
- 1 cup sugar
- 2 eggs
- 2 tablespoons cocoa powder
- 1/2 cup skim milk
- 1/2 teaspoon peppermint extract
Recipe
- 1 preheat oven to 180 degrees celcius.
- 2 put all the ingredients in a mixing bowl and beat well for about 2 minutes.
- 3 pour butter into a greased cake tin.
- 4 bake for 40-45 minutes. do not overbake, as it can dry out.
- 5 leave to cool in tin before slicing.
