Sarah's Ultimate Blondies (coconut Butterscotch)

Ingredients

- 6 tablespoons unsalted butter, melted
- 1 cup light brown sugar, packed
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 cup flour
- 2 teaspoons baking powder
- 3/4 cup unsweetened flaked coconut
- 6 ounces chocolate, melted
- 6 ounces butterscotch chips (optional, but encouraged)
Recipe
- 1 preheat oven to 350 degrees. prepare a 13 x 9-inch square pan by lining it with baking parchment.
- 2 with an electric mixer, beat together butter and sugars in a large bowl. add vanilla and eggs, beat until well combined.
- 3 add flour, baking powder and coconut with the mixer, then add melted chocolate and beat until combined. stir in butterscotch chips with a large spoon.
- 4 spread in the prepared pan. bake at 350 for 30 minutes. if a toothpick inserted 2 inches from the edge comes out clean, they are done. allow to cool and serve.
