Sarah's Ultimate Blondies (coconut Butterscotch)

Ingredients

  • Servings: 12
  • 6 tablespoons unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup flour
  • 2 teaspoons baking powder
  • 3/4 cup unsweetened flaked coconut
  • 6 ounces chocolate, melted
  • 6 ounces butterscotch chips (optional, but encouraged)

Recipe

  • 1 preheat oven to 350 degrees. prepare a 13 x 9-inch square pan by lining it with baking parchment.
  • 2 with an electric mixer, beat together butter and sugars in a large bowl. add vanilla and eggs, beat until well combined.
  • 3 add flour, baking powder and coconut with the mixer, then add melted chocolate and beat until combined. stir in butterscotch chips with a large spoon.
  • 4 spread in the prepared pan. bake at 350 for 30 minutes. if a toothpick inserted 2 inches from the edge comes out clean, they are done. allow to cool and serve.
