Rumba Brownies

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 1 cup sugar
  • 1/2 cup butter
  • 1 1/4 cups chocolate syrup
  • 3 eggs
  • 3 teaspoons rum
  • 1 1/4 cups unbleached flour
  • 1 cup raisins
  • 1/2 cup flaked coconut
  • 1/4 cup butter
  • 1/4 cup unsweetened cocoa
  • 1 1/2 cups icing sugar
  • 2 -3 tablespoons milk
  • 1/4 teaspoon rum

Recipe

  • 1 preheat oven to 350f and lightly grease a 9x13 baking pan.
  • 2 in a large bowl beat butter and sugar until fluffy and light in colour.
  • 3 add syrup, eggs and rum, beating at low speed until blended. then add flour and beat again on low speed. when flour is blended in stir in raisins and coconut.
  • 4 spread mix in pan and bake 30-35 min's or until toothpick test comes out clean. cool brownies to room temperature then frost.
  • 5 frosting: in a 2 litre saucepan, melt butter over medium heat. stir in cocoa and bring to a boil, stirring constantly!
  • 6 remove from heat and cool slightly. add rest of ingredients; stir until smooth; spread on brownies.
