Rocky Road

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 750 g dark chocolate melts (or milk or a combination)
  • 500 g marshmallows (pink and )
  • 50 g glace cherries
  • 50 g copha
  • 100 g unsalted peanuts
  • 6 tablespoons desiccated coconut

Recipe

  • 1 line a 30cm square tin with baking paper.
  • 2 melt chocolate and copha in a heatproof bowl over gently boiling water and stir until smooth.
  • 3 combine all other ingredients in another large bowl leaving aside 2 tblsp of coconut.
  • 4 pour in melted chocolate and mix well.
  • 5 pour completed mixture into the lined tin and spread.
  • 6 sprinkle on the remaining coconut.
  • 7 refrigerate then cut into chunky squares.
  • 8 enjoy.
