Rocky Road Brownies

Ingredients

- 19 1/2 ounces brownie mix
- 1/2 cup oil
- 1/4 cup water
- 2 eggs
- 1 cup pecans, chopped
- 2 ounces unsweetened chocolate squares
- 1/3 cup milk
- 1/2 cup butter
- 16 ounces powdered sugar
- 1/2 teaspoon vanilla extract
Recipe
- 1 mix the chocolate brownies according to package directions (i.e., mix package with 1/2 cup oil, 1/4 c water, and 2 eggs for 50 strokes).
- 2 fold in the cup of chopped pecans into the batter.
- 3 spread the batter mixture in a greased pan and bake for 25 minutes.
- 4 remove from oven and sprinkle the miniature marshmallows over the hot brownies so the melt a bit. cool.
- 5 in a heavy saucepan, melt the chocolate, milk, and butter together until combined (be sure to stir constantly).
- 6 remove chocolate mixture from the heat and add the vanilla.
- 7 add the powdered sugar a little at a time, mixing with a hand mixer on low speed, until the frosting is the desired consistency for spreading.
- 8 spread over brownies with marshmallows.
- 9 cool and cut into bars.
