Pink Peppermint Layer Dessert

Total Time: 35 mins Preparation Time: 30 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 cup vanilla wafers (about 16 wafers or 14 graham cracker squares) or 1 cup graham cracker crumbs (about 16 wafers or 14 graham cracker squares)
  • 1/2 cup butter, softened
  • 1 cup confectioners' sugar
  • 2 ounces melted unsweetened chocolate (cooled)
  • 3 eggs
  • 1/2 cup chopped nuts
  • 1 cup whipped cream (chilled)
  • 1/2 cup crushed peppermint candy
  • 1 cup miniature marshmallow

Recipe

  • 1 sprinkle 1/2 cup of the crumbs evenly in ungreased square pan 8x8x2" or 9x9x2".
  • 2 beat butter, sugar, chocolate, and eggs in a small mixer bowl until light and fluffy.
  • 3 stir in nuts.
  • 4 spread evenly over crumbs in pan.
  • 5 sprinkle remaining crumbs over chocolate layer.
  • 6 in a chilled bowl, beat whipping cream until stiff.
  • 7 fold peppermint candies and marshmallows into whipped cream.
  • 8 spoon whipped cream mixture over crumbs and spread evenly to sides of pan.
  • 9 refrigerate for atleast 12 hours before serving.
  • 10 serve garnish with whipped cream and shaved chocolate if desired.
