Joanna's Chocolate-banana Muffins

Ingredients
- 1 1/4 cups plain flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsweetened cocoa powder (the best quality you can find)
- 1 cup sugar
- 2 small bananas (very ripe, no brown spots, mashed)
- 1 egg
- 1/3 cup vegetable oil
- 1/4 cup milk or 1/4 cup buttermilk
- 1 teaspoon vanilla essence
- 1/2 cup dark chocolate chips (use good quality if possible)
Recipe
- 1 pre-heat oven to 180 degrees celsius.
- 2 combine dry ingredients in a large bowl and make a well in the centre.
- 3 combine wet ingredients in a small bowl and mix well.
- 4 add wet ingredients to dry ingredients and mix well with a fork.
- 5 spoon into a 12 hole paper-lined muffin tin.
- 6 bake for around 15-20 minutes or until a skewer comes out clean.
- 7 cool in tray for 5 minutes and then remove and serve.
- 8 these are even more decadent if you top them with a chocolate ganache frosting.
