Peppermint Potato Candy

Ingredients
- 3/4 cup warm mashed potatoes (prepared without milk or butter)
- 2 teaspoons butter, softened
- 1 teaspoon peppermint extract
- 2 lbs powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tablespoon shortening
Recipe
- 1 in a large mixing bowl, beat the mashed potatoes, butter and peppermint extract.
- 2 gradually beat in the powdered sugar.
- 3 press into a foil-lined 13x9-inch baking dish.
- 4 melt chocolate chips and shortening (either in the microwave or in the top of a double boiler).
- 5 spread over potato mixture. cover and refrigerate until set.
- 6 using foil, lift candy out of pan. remove foil and discard.
- 7 cut candy into 1-inch squares. store in an air-tight container.
