Mint Chocolate Cheesecake

Ingredients

- 1 3/4 cups chocolate wafer crumbs
- 1/4 cup melted butter
- 3 (8 ounce) packages cream cheese, softened
- 3/4 cup sugar
- 3 large eggs
- 1/3 cup creme de menthe or 3/4 teaspoon mint extract (with 10 drops green food coloring)
- 3 ounces chocolate, melted
- 1 chocolate mint candy bar, for garnish
Recipe
- 1 preheat oven to 325 degrees.
- 2 in a medium bowl combine the wafer crumbs and butter.
- 3 press into the bottom and 2 inches up the sides of a 9 inch springform pan.
- 4 set aside.
- 5 in a large bowl beat together the cream cheese and sugar until smooth.
- 6 beat in eggs one at a time until blended.
- 7 beat in liqueur and melted chocolate.
- 8 pour over crust and bake for 50 minutes or until center is just set.
- 9 remove from oven and place on a wire rack.
- 10 run a knife around the sides of the pan to loosen.
- 11 cool at room temp and then chill in the fridge overnight.
- 12 to make curls shave chocolate bar with a vegetable peeler and place on top of cheesecake.
