Mint Chocolate Cheesecake

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 10
  • 1 3/4 cups chocolate wafer crumbs
  • 1/4 cup melted butter
  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1/3 cup creme de menthe or 3/4 teaspoon mint extract (with 10 drops green food coloring)
  • 3 ounces chocolate, melted
  • 1 chocolate mint candy bar, for garnish

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 in a medium bowl combine the wafer crumbs and butter.
  • 3 press into the bottom and 2 inches up the sides of a 9 inch springform pan.
  • 4 set aside.
  • 5 in a large bowl beat together the cream cheese and sugar until smooth.
  • 6 beat in eggs one at a time until blended.
  • 7 beat in liqueur and melted chocolate.
  • 8 pour over crust and bake for 50 minutes or until center is just set.
  • 9 remove from oven and place on a wire rack.
  • 10 run a knife around the sides of the pan to loosen.
  • 11 cool at room temp and then chill in the fridge overnight.
  • 12 to make curls shave chocolate bar with a vegetable peeler and place on top of cheesecake.
