Mini Cheesecakes

Ingredients

• Servings: 12
• 12 vanilla wafers
• 2 (8 ounce) packages cream cheese
• 1/2 cup sugar
• 1 teaspoon vanilla
• 2 eggs

Recipe

• 1 line muffin tins with liners.
• 2 place one wafer in each liner.
• 3 mix cream cheese, vanilla and sugar on medium speed until well blended.
• 4 add eggs.
• 5 mix well.
• 6 pour over wafers, filling 3/4 full.
• 7 bake for 25 minutes at 325 degrees.
• 8 remove from pan when cool and top with fruit, nuts, chocolate or whatever you wish!
