Mini - Cheesecakes

Ingredients

• 12 vanilla wafers
• 2 (8 ounce) packages cream cheese, softened
• 1/2 cup sugar
• 1 teaspoon vanilla
• 2 eggs

Recipe

• 1 line muffin tins with foil.
• 2 place one vanilla wafer in each liner.
• 3 mix cream cheese, vanilla and sugar on medium speed until well blended. add egg, one at at time, blending well after each addition. pour over wafers, filling 3/4 full.
• 4 bake at 325f for 25 minutes.
• 5 remove form pan and cool.
• 6 top with fruit preserves, nuts or chocolate.
• 7 be creative!
