Mint 'n Chocolate Fudge

Ingredients

  • Servings: 48
  • 1/2 cup butter or 1/2 cup margarine
  • 3/4 cup cocoa
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup evaporated milk
  • 3 tablespoons softened butter or 3 tablespoons margarine
  • 1 tablespoon water
  • 1/8-1/4 teaspoon mint extract
  • 1 1/2 cups confectioners' sugar
  • green food coloring

Recipe

  • 1 line 8-inch square pan with foil.
  • 2 in medium microwave-safe bowl place butter.
  • 3 microwave at high 1 to 1 1/2 minutes or until melted.
  • 4 add cocoa; stir until smooth.
  • 5 stir in confectioners' sugar and vanilla; blend well (mixture will be dry and crumbly).
  • 6 stir in evaporated milk.
  • 7 microwave at high 1 to 2 minutes or until mixture is hot.
  • 8 beat with whisk until smooth.
  • 9 immediately pour into prepared pan.
  • 10 cover; chill until firm.
  • 11 spread pastel mint topping (see below) evenly over fudge; chill until firm.
  • 12 cut into 1-inch squares.
  • 13 cover; store in refrigerator.
  • 14 pastel mint topping.
  • 15 in small mixer bowl beat 3 tablespoons softened butter or margarine, 1 tablespoon water and 1/8 to 1/4 teaspoon mint extract until blended.
  • 16 gradually add 1 1/2 cups confectioners' sugar and 2 drops green food coloring.
  • 17 beat until smooth.
