Mint 'n Chocolate Fudge

Ingredients

- 1/2 cup butter or 1/2 cup margarine
- 3/4 cup cocoa
- 4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1/2 cup evaporated milk
- 3 tablespoons softened butter or 3 tablespoons margarine
- 1 tablespoon water
- 1/8-1/4 teaspoon mint extract
- 1 1/2 cups confectioners' sugar
- green food coloring
Recipe
- 1 line 8-inch square pan with foil.
- 2 in medium microwave-safe bowl place butter.
- 3 microwave at high 1 to 1 1/2 minutes or until melted.
- 4 add cocoa; stir until smooth.
- 5 stir in confectioners' sugar and vanilla; blend well (mixture will be dry and crumbly).
- 6 stir in evaporated milk.
- 7 microwave at high 1 to 2 minutes or until mixture is hot.
- 8 beat with whisk until smooth.
- 9 immediately pour into prepared pan.
- 10 cover; chill until firm.
- 11 spread pastel mint topping (see below) evenly over fudge; chill until firm.
- 12 cut into 1-inch squares.
- 13 cover; store in refrigerator.

- 15 in small mixer bowl beat 3 tablespoons softened butter or margarine, 1 tablespoon water and 1/8 to 1/4 teaspoon mint extract until blended.
- 16 gradually add 1 1/2 cups confectioners' sugar and 2 drops green food coloring.
- 17 beat until smooth.
