Mint Layer Fudge

Ingredients
- 2 1/4 cups sugar
- 3/4 cup evaporated milk
- 1 cup marshmallow cream
- 1/4 cup butter
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1 1/2 cups sifted powdered sugar
- 2 tablespoons butter, melted
- 2 tablespoons evaporated milk
- 1/4 teaspoon peppermint extract
- 2 drops green food coloring
Recipe
- 1 chocolate layer:.
- 2 in a heavy 3-quart saucepan mix sugar, evaporated milk, marshmallow creme, butter and salt.
- 3 cook, stirring constantly, over medium heat until mixture comes to a rolling boil. boil and stir 5 minutes.
- 4 remove from heat. stir in chocolate chips until completely melted. add vanilla.
- 5 pour into a buttered 8-inch square baking pan. let cool.
- 6 mint layer:.
- 7 stir together 2 tablespoons butter, powdered sugar, evaporated milk, peppermint extract and green food coloring.
- 8 mix until smooth. pour over cooled chocolate fudge.
- 9 refrigerate until firm. cut into 1-inch squares.
