Super Energy Bars

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 2 cups whole wheat flour
  • 1 cup unsweetened flaked coconut
  • 1/2 cup sesame seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup flax seed
  • 3/4 cup raisins
  • 1/2 cup dark chocolate chips
  • 1 1/2 cups natural-style peanut butter
  • 1 cup applesauce
  • 1/4 cup agave nectar (or substitute with 1/2 cup honey)
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 350.
  • 2 mix all dry ingredients together.
  • 3 add peanut butter, honey, and vanilla - mix well. (i used my mixer - it's pretty dense).
  • 4 grease a 13x9 baking pan - spread mixture into pan (should be about an inch thick).
  • 5 bake for 15-20 minutes.
  • 6 cool and cut into squares. i'm going to refrigerate them (in the hopes they will hold together a little better).
  • 7 enjoy -- yummy & healthy!
