Homemade Frozen Fudge Pops

Total Time: 18 mins Preparation Time: 10 mins Cook Time: 8 mins

Ingredients

  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 3 cups milk or 3 cups half-and-half
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips
  • vegetable oil cooking spray, for plastic cups
  • 12 disposable plastic cups (3-oz)
  • 12 wooden popsicle sticks

Recipe

  • 1 in a heavy-bottomed saucepan, combine the cornstarch and salt.
  • 2 gradually stir in milk (i prefer 1 cup half and half mixed with 2 cups whipping cream, so bottom of the pot will not scorch).
  • 3 stir in corn syrup and vanilla.
  • 4 bring to a boil; cook and stir for 1 min, or until thickened.
  • 5 reduce heat, stir in the milk chocolate chips until melted.
  • 6 pour in to cups (sprayed lightly with vegetable spray, i like pam spray).
  • 7 cover each cup with heavy-duty foil; insert sticks through foil.
  • 8 place in a 13 x 9-in pan.
  • 9 freeze until firm.
  • 10 remove foil and cups before serving.
