Homemade Frozen Fudge Pops

Ingredients
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 3 cups milk or 3 cups half-and-half
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 cup milk chocolate chips
- vegetable oil cooking spray, for plastic cups
- 12 disposable plastic cups (3-oz)
- 12 wooden popsicle sticks
Recipe
- 1 in a heavy-bottomed saucepan, combine the cornstarch and salt.
- 2 gradually stir in milk (i prefer 1 cup half and half mixed with 2 cups whipping cream, so bottom of the pot will not scorch).
- 3 stir in corn syrup and vanilla.
- 4 bring to a boil; cook and stir for 1 min, or until thickened.
- 5 reduce heat, stir in the milk chocolate chips until melted.
- 6 pour in to cups (sprayed lightly with vegetable spray, i like pam spray).
- 7 cover each cup with heavy-duty foil; insert sticks through foil.
- 8 place in a 13 x 9-in pan.
- 9 freeze until firm.
- 10 remove foil and cups before serving.
