Old-time Peppermint Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2/3 cup butter or 2/3 cup margarine
  • 1 2/3 cups sugar
  • 3 eggs
  • 1/2 teaspoon vanilla
  • 2 cups unsifted all-purpose flour
  • 2/3 hershey's cocoa
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup crushed peppermint candy

Recipe

  • 1 combine butter, sugar, eggs and vanilla in large mixer bowl. beat on high speed 3 minutes. combine flour, cocoa, baking soda, baking powder and salt; blend just until combined; add candy. pour into two greased and floured 9-inch layer pans. bake at 350 for 30 to 35 minutes or until cake tester inserted in center comes out clean. cool 10 minutes; remove from pans. cool completely; frost.
  • 2 variation.
  • 3 chocolate cupcakes; omit peppermint. fill 30 paper-lined muffin cups (2 1/2 inches in diameter) 2/3 full with bater. bake at 350 for 20 to 25 minutes. frost as desired.
