Old-time Peppermint Cake

Ingredients
- 2/3 cup butter or 2/3 cup margarine
- 1 2/3 cups sugar
- 3 eggs
- 1/2 teaspoon vanilla
- 2 cups unsifted all-purpose flour
- 2/3 hershey's cocoa
- 1 1/4 teaspoons baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup crushed peppermint candy
Recipe
- 1 combine butter, sugar, eggs and vanilla in large mixer bowl. beat on high speed 3 minutes. combine flour, cocoa, baking soda, baking powder and salt; blend just until combined; add candy. pour into two greased and floured 9-inch layer pans. bake at 350 for 30 to 35 minutes or until cake tester inserted in center comes out clean. cool 10 minutes; remove from pans. cool completely; frost.
- 2 variation.
- 3 chocolate cupcakes; omit peppermint. fill 30 paper-lined muffin cups (2 1/2 inches in diameter) 2/3 full with bater. bake at 350 for 20 to 25 minutes. frost as desired.
