Microwaved Cocoa Muffins

Total Time: 7 mins Preparation Time: 5 mins Cook Time: 2 mins

Ingredients

  • Servings: 12
  • 1 cup flour
  • 2/3 cup sugar
  • 1/4 cup cocoa
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 egg
  • 1 cup raisins
  • 1/2 cup pecans, chopped (optional)

Recipe

  • 1 combine flour, sugar, cocoa, baking powder and salt in a med bowl.
  • 2 add milk, oil, egg stir just until moistened.
  • 3 fold in raisins and nuts.
  • 4 fill 6-7 muffin papers 1/2 full.
  • 5 place cups in microwave-proof cupcake or muffin tin.
  • 6 microwave on high for 2-2 1/2 minutes.
  • 7 repeat process with remaining batter.
