Microwaved Cocoa Muffins

Ingredients
- Servings: 12
- 1 cup flour
- 2/3 cup sugar
- 1/4 cup cocoa
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup oil
- 1 egg
- 1 cup raisins
- 1/2 cup pecans, chopped (optional)
Recipe
- 1 combine flour, sugar, cocoa, baking powder and salt in a med bowl.
- 2 add milk, oil, egg stir just until moistened.
- 3 fold in raisins and nuts.
- 4 fill 6-7 muffin papers 1/2 full.
- 5 place cups in microwave-proof cupcake or muffin tin.
- 6 microwave on high for 2-2 1/2 minutes.
- 7 repeat process with remaining batter.
