Microwave Chocolate Peppermint-pecan Brittle

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 36
  • 2 lbs chocolate (use a good quality chocolate)
  • 1/2 teaspoon peppermint extract
  • 30 small candy canes
  • 1/2 cup chopped pecans

Recipe

  • 1 line a large jellyroll pan with heavy-duty foil.
  • 2 place the chocolate in a microwave-safe bowl.
  • 3 heat in microwave on medium setting for 5-6 minutes, stirring occasionally until the chocolate is melted and smooth.
  • 4 place the candy canes in a plastic bag or between two pieces of waxed paper.
  • 5 using a mallet or rolling pin break the candy canes into chunks, then stir into the melted chocolate along with pecans (if using).
  • 6 spread evenly in pan.
  • 7 chill until set (about 45 minutes to 1 hour).
  • 8 break into pieces by slamming the pan on counter.
  • 9 delicious!
