Microwave Chocolate Peppermint-pecan Brittle

Ingredients

- 2 lbs chocolate (use a good quality chocolate)
- 1/2 teaspoon peppermint extract
- 30 small candy canes
- 1/2 cup chopped pecans
Recipe
- 1 line a large jellyroll pan with heavy-duty foil.
- 2 place the chocolate in a microwave-safe bowl.
- 3 heat in microwave on medium setting for 5-6 minutes, stirring occasionally until the chocolate is melted and smooth.
- 4 place the candy canes in a plastic bag or between two pieces of waxed paper.
- 5 using a mallet or rolling pin break the candy canes into chunks, then stir into the melted chocolate along with pecans (if using).
- 6 spread evenly in pan.
- 7 chill until set (about 45 minutes to 1 hour).
- 8 break into pieces by slamming the pan on counter.
