Mrs. Faye's Chocolate Pie

Ingredients
- 1 refrigerated pie crust (baked and cooled)
- 3/4 cup sugar
- 3 tablespoons flour
- 1/2 teaspoon salt
- 2 cups milk
- 2 1/2 tablespoons cocoa
- 2 egg yolks (save whites for meringue)
- 1 teaspoon vanilla
- 2 1/2 tablespoons butter
- 2 egg whites (yolks for pie filling)
- 1/4 teaspoon cream of tartar
- 6 tablespoons sugar
Recipe
- 1 combine sugar, flour, salt and cocoa with milk.
- 2 cook over medium low heat until thickened.
- 3 beat egg yolks and add extremely slow to cocoa mixture, stirring quickly while adding so the yolks don't cook separately.
- 4 continue to cook over low medium low heat to thicken a bit more. (about 15 to 20 minutes).
- 5 remove from heat and add vanilla.
- 6 drop in butter, but do so in dots or make sure butter is softened.
- 7 stir well.
- 8 pour into baked and cooled pie crust.
- 9 whip egg whites with cream of tartar. add sugar a little at a time and whip until stiff peaks form.
- 10 spread on pie, making sure to seal the edges of the meringue to the pie crust.
- 11 bake at 350 for about 15 minutes, until meringue is lightly browned.
