Mrs. Faye's Chocolate Pie

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1 refrigerated pie crust (baked and cooled)
  • 3/4 cup sugar
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 1/2 tablespoons cocoa
  • 2 egg yolks (save whites for meringue)
  • 1 teaspoon vanilla
  • 2 1/2 tablespoons butter
  • 2 egg whites (yolks for pie filling)
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar

Recipe

  • 1 combine sugar, flour, salt and cocoa with milk.
  • 2 cook over medium low heat until thickened.
  • 3 beat egg yolks and add extremely slow to cocoa mixture, stirring quickly while adding so the yolks don't cook separately.
  • 4 continue to cook over low medium low heat to thicken a bit more. (about 15 to 20 minutes).
  • 5 remove from heat and add vanilla.
  • 6 drop in butter, but do so in dots or make sure butter is softened.
  • 7 stir well.
  • 8 pour into baked and cooled pie crust.
  • 9 whip egg whites with cream of tartar. add sugar a little at a time and whip until stiff peaks form.
  • 10 spread on pie, making sure to seal the edges of the meringue to the pie crust.
  • 11 bake at 350 for about 15 minutes, until meringue is lightly browned.
