Rich Chocolate Mousse

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 6 ounces semisweet chocolate, broken into pieces
  • 6 tablespoons heavy cream
  • 3 eggs, separated
  • unsweetened cocoa powder, for dusting

Recipe

  • 1 put the chocolate and cream in a heatproff bowl set over a saucepan of gently simmering water (do not let the bowl touch the water).
  • 2 stir until the chocolate has melted.
  • 3 allow to cool for 5 minutes.
  • 4 then beat in the egg yolks one at a time.
  • 5 beat the egg whites in a separate clean bowl with an electric mixer until stiff.
  • 6 lightly fold the egg whites into the chocolate mixture until combined.
  • 7 spoon the mousse into 4 ramekins or dessert glasses and chill for 2 hours.
  • 8 dust with cocoa powder before serving.
