Naturally Low-fat Chocolate Fudge Cake

Ingredients

- 85 g dark chocolate, chopped finely
- 1/2 cup cocoa powder
- 1 cup brown sugar, firmly packed
- 1/2 cup boiling water
- 2 egg yolks
- 1/4 cup almond meal
- 1/3 cup whole wheat flour
- 4 egg whites
Recipe
- 1 pre-heat oven to moderate.
- 2 line base and side of deep 20cm round cake pan.
- 3 combine chocolate, cocoa and sugar with the water in a large bowl.
- 4 stir until smooth.
- 5 add egg yolks, whisk to combine.
- 6 fold in almond meal and flour.
- 7 beat egg whites in a small bowl with an electric mixer until peaks form.
- 8 gently fold egg mixture into chocolate mixture, in 2 batches.
- 9 pour into prepared pan.
- 10 bake in moderate oven about 40 minutes.
- 11 stand in pan 5 minutes.
- 12 turn onto wire rack, remove paper.
- 13 serve warm with icing sugar and dotted with fresh strawerries, also divine cold.
