Naturally Low-fat Chocolate Fudge Cake

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 85 g dark chocolate, chopped finely
  • 1/2 cup cocoa powder
  • 1 cup brown sugar, firmly packed
  • 1/2 cup boiling water
  • 2 egg yolks
  • 1/4 cup almond meal
  • 1/3 cup whole wheat flour
  • 4 egg whites

Recipe

  • 1 pre-heat oven to moderate.
  • 2 line base and side of deep 20cm round cake pan.
  • 3 combine chocolate, cocoa and sugar with the water in a large bowl.
  • 4 stir until smooth.
  • 5 add egg yolks, whisk to combine.
  • 6 fold in almond meal and flour.
  • 7 beat egg whites in a small bowl with an electric mixer until peaks form.
  • 8 gently fold egg mixture into chocolate mixture, in 2 batches.
  • 9 pour into prepared pan.
  • 10 bake in moderate oven about 40 minutes.
  • 11 stand in pan 5 minutes.
  • 12 turn onto wire rack, remove paper.
  • 13 serve warm with icing sugar and dotted with fresh strawerries, also divine cold.
