Super Antioxidant Blueberry Banana Chocolate Chip Bread

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • 2 cups sugar
  • 1/4 cup butter, room temperature
  • 20 tablespoons ground flax seeds
  • 2 eggs
  • 3 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 1/4 cups buttermilk
  • 1/2 teaspoon vanilla extract
  • 2 bananas, mashed
  • 1 pint blueberries
  • 1 cup dark chocolate chips

Recipe

  • 1 cream butter, add sugar and flax seed.
  • 2 beat in eggs, one at a time.
  • 3 sift dry ingredients together, add alternately with buttermilk.
  • 4 add vanilla and bananas and blend.
  • 5 mix in blueberries and chocolate chips.
  • 6 bake in two loaf pans at 350º for 1 hour to 1 hour and 20 minutes or until done.
  • 7 when done, bread will turn loose from sides of pan and knife inserted in middle will be clean.
