Peanut Butter Banana Chocolate Chip Bread

Ingredients

  • Servings: 12
  • 2 cups flour
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 3/4 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1/3 cup buttermilk
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)
  • 1 cup ripe banana, mashed
  • 1/4 cup oil
  • 2 eggs
  • 1 cup chocolate chips
  • 1/4 cup chopped peanuts (optional)

Recipe

  • 1 whisk together flour, baking soda, salt and cinnamon in a large bowl.
  • 2 in another large bowl, combine bananas, sugars, peanut butter, oil, eggs, buttermilk and vanilla until smooth.
  • 3 add the wet ingredients to the dry ingredients and stir just until combined.
  • 4 do not over mix.
  • 5 then fold in 3/4 cup chocolate chips.
  • 6 pour batter into a 8 x 4 inch greased and floured loaf pan.
  • 7 sprinkle chopped peanuts and remaining 1/4 cup of chocolate chips evenly over the batter, press lightly.
  • 8 bake at 350 degrees for 60-65 minutes or until toothpick inserted in center comes out clean.
  • 9 this can also be made in three greased and floured mini loaf pans. bake for 40 to 45 minutes.
  • 10 cool in pan on wire rack 10- 15 minutes, remove from pan and cool completely.
  • 11 wrap and store overnight before serving.
