Orange Fudge

Total Time: 1 hr 5 mins Preparation Time: 45 mins Cook Time: 20 mins

Ingredients

  • 3 cups sugar
  • 1 cup evaporated milk
  • 1/4 cup orange juice
  • 1/4 teaspoon salt
  • 2 oranges, rind of, grated
  • 1 cup pecans
  • 2 tablespoons margarine

Recipe

  • 1 heat milk in double boiler.
  • 2 caramelize 1 cup sugar in deep heavy saucepan.
  • 3 stir in orange juice and hot milk.
  • 4 stir in remaning sugar and orange rind.
  • 5 cook, stirring often,to soft ball stage.
  • 6 remove from heat and add margarine.
  • 7 when cool, beat until creamy and stir in nuts.
  • 8 pour outon greased platter and cut into squares.
