Rebecca's Cousin Darcey's Tea Cake

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 12
  • 4 ounces unsweetened baking chocolate
  • 2 cups boiling water
  • 2/3 cup unsalted butter
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups sifted flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt

Recipe

  • 1 pour the hot water over the chocolate in a bowl (let sit, do not stir).
  • 2 in the bowl of a mixer cream butter and sugar.
  • 3 add eggs and vanilla and beat well.
  • 4 pour the water off of the chocolate and reserve the water.
  • 5 pour the melted chocolate into the butter, sugar, egg, vanilla mixture and beat well.
  • 6 mix flour and other dry ingredients in a separate bowl.
  • 7 add the dry mixture in three batches to the mixing bowl alternating with the reserved water. mix thoroughly.
  • 8 bake in a buttered and floured tube pan at 350 degrees for 50 to 60 minutes.
