Spicy Cocoa Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 3/4 cups flour
  • 3/4 cup sugar
  • 6 tablespoons cocoa
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup buttermilk
  • 1/2 cup butter, melted
  • 1/2 cup chocolate chips (i use extra large ones)

Recipe

  • 1 preheat oven at 400 degrees.
  • 2 mix flour, sugar, cocoa, baking powder, baking soda, cinnamon, cloves and salt together in a large bowl.
  • 3 in a separate bowl, combine the eggs, buttermilk and melted butter.
  • 4 add the liquid mixture to the dry ingredients, stirring just enough to moisten.
  • 5 fold in the chocolate chips.
  • 6 spoon the mixture into greased muffin pans, filling 3/4 full.
  • 7 bake until a toothpick comes out clean, about 15 minutes.
  • 8 remove immediately from the tins and cool briefly on a wire rack.
