Non-dairy Simple Chocolate Mousse

Ingredients
- 3/4 cup margarine, melted
- 1 cup sugar
- 1/2 cup cocoa
- 4 eggs
- 8 ounces rich whip
- 1 graham cracker crust
Recipe
- 1 beat together margarine, sugar, cocoa, and eggs for about 2 minutes until mixture becomes a little separated. (i use an electric whisk).
- 2 add each egg one at a time to the mixture - beat after each egg.
- 3 add vanilla.
- 4 beat for about 5 minutes until the mousse gets lighter (it starts off very dark, you will be able to see the difference).
- 5 as you mix, make sure to scrape sides so everything mixes well.
- 6 pour into graham cracker crust and freeze.
- 7 when frozen (i usually do this the next day) whip up the rich whip and spread over frozen mousse.
- 8 re-freeze until ready to serve.
