Kahlua Mousse

Ingredients

- 2 egg yolks
- 2 tablespoons kahlua
- 1/4 cup sugar
- 3 ounces semisweet chocolate
- 1/4 cup butter
- 2 tablespoons kahlua
- 2 egg whites
- 1 1/2 teaspoons sugar
- 1 cup whipping cream
- mint leaf, for garnish
- chocolate stick, for garnish
Recipe
- 1 beat egg yolks and 2 tbsp kahlua in the top of a double boiler.
- 2 beat in 1/4 cup sugar and beat until slightly thickened,and color lightens.
- 3 place pan over boiling water.
- 4 cook stir until thickened,about ten minutes.
- 5 set top of double boiler in a bowl of cold water.
- 6 beat until mixture is thick, 3-4 minutes.
- 7 melt chocolate and butter together.
- 8 stir in remaining 2 tbsp kahlua.
- 9 add to egg mixture.
- 10 beat whites until soft peaks form.
- 11 add remaining sugar.
- 12 beat until stiff peaks form.
- 13 add to chocolate mixture.
- 14 beat whipping cream stiff.
- 15 fold into chocolate mixture.
- 16 spoon mousse into parfait glasses or dessert cups.
- 17 chill 3 hours before serving.
