Low Carb Chocolate "mousse"

Ingredients

  • Servings: 4
  • 16 ounces ricotta cheese
  • 2 ounces cream cheese (preferably whipped, or softened)
  • 1/2 cup splenda sugar substitute
  • 1/4-1/3 cup heavy whipping cream
  • 2 tablespoons cocoa
  • 2 tablespoons sugar-free chocolate syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped toasted nuts, of choice

Recipe

  • 1 process cheeses and cream with hand mixer for 1-2 minutes, until smooth.
  • 2 add splenda, cocoa, vanilla, chocolate syrup, and cinnamon.
  • 3 process until smooth and creamy.
  • 4 spoon into 6 dessert cups and garnish with nuts.
  • 5 *could add 2 tablespoons peanut butter for variation.
  • 6 *could make super mousse-y by whipping half the cream separately and folding it inches.
