Perfect Chocolate Cake

Ingredients

  • Servings: 12
  • 1 cup cocoa
  • 2 cups boiling water
  • 1 cup butter, softened
  • 2 1/2 cups sugar
  • 4 eggs
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla

Recipe

  • 1 combine cocoa and boiling water, stirring until smooth; set aside until cool.
  • 2 cream butter, gradually add sugar, beating well at medium speed. add eggs, one at a time, beating well after each addition.
  • 3 combine dry ingredients in a medium bowl, add to creamed mixture alternately with the cooled cocoa mixture, beating at low speed, beginning and ending with the dry ingredients. stir in vanilla. do not overbeat.
  • 4 pour batter into 3 buttered and floured 9-inch round cakepans. bake at 350 degrees for 20 - 25 minutes or until a cake tester inserted in center comes out clean. cool in pans 10 minutes, remove from pans and cool completely on wire racks.
